Today marks one year of eating an almost vegan diet. Its been amazing some days and incredibly testing others. I’ve broken down a few times but I have not consumed any meat.
I think as of today I will switch to eating a “strict” vegetarian diet (meaning very little dairy and egg consumption) & allow myself to eat meat situationally & when I’m craving it (which is now extremely rare).
I have learned so much about myself & about our food industry from doing research. I’ve also learned to view food as fuel for my body since as a vegan you REALLY have pay attention to what nutrients certain foods offer your body & when you don’t consume the proper nutrients, your body HATES you.
I honestly think everyone should attempt to eat a vegan diet, whether its for a day, a week, a month or longer. It will really open your eyes.
